Sitaw: Filipino String Beans in Coconut Milk

I'm not a casual string bean eater, but this recipe from the Philippines was delicious and something people from around the world can enjoy, vegans, vegetarians, and eatetarians alike. My husband, who was a missionary there for two years, made it for us, and I thought others might enjoy the technique. 


Ingredients:

string beans: 1 bunch
red onion: half, diced
garlic: 4 cloves
ground ginger: 1 tablespoon
coconut cream: 1 can 
water: as needed 
soy sauce: to taste

Optional: add ground pork, Thai chili, or acorn squash 


Directions:

Dice the onion. Saute it until it is translucent. Add the crushed garlic and ginger, cook until fragrant. Add green beans, stir. Add enough water to cover the string beans. Boil until green beans are al dente. Add coconut cream. Cook until thickened.  Season with soy sauce. Serve over rice.
